This Ginger Carrot Soup with Apple and Cinnamon is a comforting way to warm up this fall!
I start to crave soups once the temperatures begin to drop. Anyone else? I love having this ginger carrot soup with apple and cinnamon on chilly nights. It is so easy, yet so delicious! A bowl of this + some avocado toast may be the best meal of all time.
My favorite thing about this soup is how it makes the whole kitchen smell like fall. It starts off with sauteed cinnamon apples, which are basically like candy. The cinnamon blooms and becomes so aromatic. It’s amazing.
Once the apples are done, they’re combined with cooked carrots and blended to creamy perfection. DONE. This soup is full of earthy carrot flavor, a bit of gingery bite, and subtle apple sweetness. –> Fall in a bowl.
It’s kind of funny that I’m writing a blog post about super healthy soup at this moment, since I’m currently eating gluten-free chocolate cake and ice cream. These things are definitely not Paleo, and I’m okay with that. Balance is really important! On some days, I chow down on healthy food like these blackened tilapia salads with crispy capers, and on others . . . I eat a second helping of dessert.
