Ginger Carrot Soup with Apple and Cinnamon

This Ginger Carrot Soup with Apple and Cinnamon is a comforting way to warm up this fall!

I start to crave soups once the temperatures begin to drop. Anyone else? I love having this ginger carrot soup with apple and cinnamon on chilly nights. It is so easy, yet so delicious! A bowl of this + some avocado toast may be the best meal of all time.

My favorite thing about this soup is how it makes the whole kitchen smell like fall. It starts off with sauteed cinnamon apples, which are basically like candy. The cinnamon blooms and becomes so aromatic. It’s amazing.

Once the apples are done, they’re combined with cooked carrots and blended to creamy perfection. DONE. This soup is full of earthy carrot flavor, a bit of gingery bite, and subtle apple sweetness. –> Fall in a bowl.

It’s kind of funny that I’m writing a blog post about super healthy soup at this moment, since I’m currently eating gluten-free chocolate cake and ice cream. These things are definitely not Paleo, and I’m okay with that. Balance is really important! On some days, I chow down on healthy food like these blackened tilapia salads with crispy capers, and on others . . . I eat a second helping of dessert.

Anyway, back to soup. We know this Ginger Carrot Soup with Apple and Cinnamon is super healthy, ’cause it’s on the blog. Duh. But just to prove a point,  let’s list all the good things about this soup. It’s:

Instructions
  1. Bring a large pot of salted water to a boil. Wash and chop the carrots (no need to peel), and add them to the boiling water. Bring the water back to a boil, then cover the pot and cook at medium heat until the carrots are soft (about ten minutes).
  2. While the carrots cook, saute the diced apple in the coconut/olive oil until soft. Add the cinnamon and ginger to the apples and cook until fragrant.
  3. Once the carrots are cooked, drain them. Add the apples and water/broth to the pot, and heat until everything is warm. Puree with an immersion blender, or add everything to a high-powered blender (such as a Vitamix) and blend until smooth.
  4. Season with salt and pepper to taste. Serve with coconut yogurt or sour cream.
