As a runner, I eat a lot of carbs. Since I generally don’t eat grains, I depend on starchy vegetables like potatoes and sweet potatoes (which can get boring). I started making these Easy Roasted Carrots a few weeks ago, and I can’t believe I didn’t make them sooner! They’re a delicious Paleo and vegan side dish. Best of all, the most time-consuming part of the recipe (besides the actual roasting) is cutting up the carrots!
I seasoned these Easy Roasted Carrots very simply, with just garlic powder and Montreal steak seasoning (and salt, haha). If you don’t have the latter, just use a smoky, peppery seasoned salt. After I baked the carrots, I topped them with some fresh basil for extra color and flavor. These carrots get super crispy on the outside, but they taste almost like sweet potatoes because they’re so sweet and soft on the inside.
I didn’t make a dipping sauce for these because I figured they didn’t need it, but you definitely can if you want to! I think the orange vinaigrette from my old Moroccan Carrot Salad would be perfect! Side note: I posted that recipe almost exactly a year ago. It’s crazy how time flies! I just hope time flies that quickly this semester, because I’m kind of dreading this fall. Once we get into the swing of things, I’ll be fine. But right now, I’m NOT excited for hours of rehearsal, tough cross-country workouts, meets, my crazy course load, and college applications. Thankfully, I got a lot of work done this summer, so I feel moderately prepared for this year.
Back to these carrots, because they’re the reason you’re reading this blog post. These Easy Roasted Carrots are ideal for Paleo runners because they’re fairly high in carbs, and the fiber that they contain is easily digestible. Roasting the carrots makes the fiber easier to digest, but (more importantly, in my opinion), it makes them taste better! People always say that carrots help your eyesight (because they have so much Vitamin A), so while they won’t cure cataracts or macular degeneration, they might help protect your eyes in the long run! You know what else does? . . . Sunglasses. –> Things I need to wear more often, haha.
