Earl Grey Donuts with Blueberry Glaze (Paleo, GF)

These Earl Grey Donuts with Blueberry Glaze are incredible! They are 100% gluten-free, Paleo, and nut-free, so (basically) everyone can eat them. The Earl Grey flavor is floral and light, and it pairs beautifully with a dash of cinnamon and a drizzle of blueberry glaze. I could eat these donuts all day! (Just kidding . . .)

I had to test this recipe twice, because the texture was all wrong the first time. The donuts practically fell apart in my hand! I was going to call it quits and post the recipe anyway (after one try, I know), but then I came to my senses. The next weekend, I re-tested the recipe. Miraculously, the donuts turned out great! I just adjusted the flour-to-tea ratio, and they came out perfectly.

I hope this photo makes you want these donuts, because it makes me want to bake an extra batch! Come on, just look at that gorgeous, fluffy crumb. You wouldn’t even know these are gluten-free and Paleo, since they look and taste like normal cake donuts! Okay, they aren’t quite as dense as cake donuts. BUT they’re still soft and delicious. šŸ™‚

We can’t forget about the delicious blueberry glaze on theseĀ Earl Grey Donuts with Blueberry Glaze! Before you get mad, let me warn you: the glaze contains powdered sugar. If that offends you in any way, please don’t make it. Just eat the donuts plain! You can also eat them with peanut butter and/or fresh blueberries. <– That’s a really good combo! Personally, I can do without the glaze if I’m avoiding refined sugar . . . but I’ll leave that up to you! I think the glaze pairs beautifully with the donuts. You should try it, but you don’t have to.

These Earl Grey Donuts with Blueberry Glaze are also fantastically easy. Just throw all of the ingredients in a food processor, blend, and bake! I used silicone donut pans (and greased them a little extra because this is a wet batter), so I don’t know how these would cook up in a donut maker. If you try it, let me know!

Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Steep the almond milk with the earl grey tea. While the tea steeps, whisk the coconut flour with the tapioca starch, baking powder, cinnamon, and salt.
  3. Strain the tea. Add 3/4 cup of the tea to a blender along with the eggs and coconut oil. Blend.
  4. While the blender runs, slowly add the dry ingredients. Blend until the batter is completely smooth.
  5. Bake in the preheated oven in a silicone donut pan (greased!) for 15 minutes.
  6. Meanwhile, make the glaze: Whisk all of the ingredients together. Done!
  7. Serve the donuts with the blueberry glaze. Enjoy!
