This easy Dairy-Free Tomato Soup is delicious and perfect for chilly days! It’s just a little bit spicy, but the chile is totally optional. 😉 I made this soup in about 20 minutes, which means it’s ideal for busy weekdays when you just want some simple comfort food. Paired with grilled cheese or some other Paleo main dish, this would be the perfect late fall/early winter meal!
I don’t know what it is about tomato soup — I associate it with fall and winter. Maybe it’s those old snowman commercials for the Campbell’s canned soup. I’m thinking of the one where the snowman walks inside and all of his snow melts and he’s actually a little boy underneath! Does anyone else remember that? I haven’t seen that commercial in years, so I guess this recipe is reminiscent of my childhood . . . in a way.
Sorry again that I’ve been absent from the blog! This year has been so draining, and I feel terrible that I haven’t been able to post consistently. It seems like I have something going on every week that prevents me from staying consistent on here. One week it’s a band competition, the next week it’s the state cross-country meet, and last week it was a big chemistry test. Right now, I’m scrambling to get everything done in the last two days before Thanksgiving break. Once break starts, though . . . it’s party time! My birthday is over break, and I’m taking advantage of some of the free time to just relax. It’s gonna be great.
You know what else is gonna be great? This Dairy-Free Tomato Soup! (See, the old Brynn — the one who makes really bad transitions — is back.) You should make it so you can experience its deliciousness for yourself! If you do the whole gluten thing, you should definitely make yourself a big grilled cheese to go along with it. You could make a gluten-free or dairy-free grilled cheese if you had the right ingredients, too. I’m writing this draft at 10:17 PM and I had a delicious taco/burrito bowl thing a couple hours ago, but now I’m craving a grilled cheese and tomato soup. As you can tell from the photos, I made a grain-free “grilled cheese” thing with some potato slices. It was surprisingly good — I’d suggest you try it too!
