This Whole30 & Paleo Curry Chicken Salad is delicious, healthy, and downright easy to make! It uses pantry staples that you probably already have! This meal is low-carb and tasty, but it’s so yummy you’d never know!
I made this Curry Chicken Salad one Friday night in early February on a whim — with no plans to make it for the blog! The next day, I decided I had to share the recipe with you guys because it was so good! I don’t know about you all, but I think normal chicken salad is kind of boring. I mean, it’s good, but . . . I’d much rather eat a spiced-up version like this!
My version of chicken salad has some typical ingredients like celery, raisins, and mayonnaise, but it also has dried apricots and curry powder! It also has chicken. Obviously.
This chicken salad is great over spinach, in mushroom caps or bell peppers, or simply by itself. The salad itself is low-carb, but I would eat it with some starch since I don’t follow a low-carb diet. You do you, boo! Also, this Curry Chicken Salad is Whole30, which means it’s perfect for like, everything. I don’t want to tout the Whole30 as a miracle cure for everything, but it kinda is. Even if you’re not eating Whole30 100% of the time (I’m not!), this salad is still delicious! Heck, you can eat this chicken salad inbetween two slices of gluten-ful bread if that’s your thing! I’m not here to judge, I’m just sharing what works for me. If my method helps someone else, great! If it doesn’t, I just hope my recipes are getting out into the world — because they’re healthy and yummy (if I do say so myself)!
I also added almonds to this salad, but you can omit them if you do not tolerate nuts. In fact, feel free to customize this recipe however you see fit! I hope you enjoy this gluten-free, dairy-free, Whole30 curry chicken salad as much as I did!
