Copycat Gingerbread RXBars

These Copycat Gingerbread RXBars are so cute! They’re so easy to make, and they’re the perfect snack for the holidays. Cutting them into gingerbread men is optional, but it makes them extra cute! When you try these, you might think you’re eating gingerbread cookies, but you’ll actually be eating a healthy “protein bar.” I hope you give these a try!

I made these the same day my sister decided to make real gingerbread men . . . so we have a few dozen “gingerbread men” sitting in the fridge right now. I’m sure we’ll go through them quickly. čśë These┬áCopycat Gingerbread RXBars are actually perfect for the holidays, because they’re a super healthy snack that still tastes festive. The holidays are definitely the hardest time of year to stay healthy because of all the delicious food (“It’s the most wonderful time of the year . . . “). If you find yourself reaching for too many unhealthy snacks or desserts, try these┬áCopycat Gingerbread RXBars instead! You might actually convince yourself that you’re eating a cookie! (Probably not, but you can dream.)

I’m writing this post late at night, when weird things run through my brain. Right now, I’m thinking about how good these bars would taste if they were dipped in chocolate. That would probably make them taste even more like a real dessert! I guess that wasn’t a super weird thought, but it was kinda unorthodox, right? I don’t know.

When I asked you all for recipe ideas on my Instagram account, many of you requested gingerbread and peppermint recipes! Both of those are on the way: I have two more ginger-y recipes (too much? I think not) and one chocolate-peppermint recipe (which may be the best thing to ever come out of my kitchen!!) coming in the next few weeks. I’m so excited to share these recipes with you, since they are actually some of my favorites ever.

Unfortunately, I got behind on some of my photographing the other day. A few of my shoots turned out really really dark, which stinks. Don’t tell me why, but I thought I could get away with photographing at 4:30 p.m. less than two weeks from the shortest day of the year. I should be able to fix the issue in post-processing, but it’s just an irritating little thing that I thought I’d share with you.

Thanks for reading! I should be back with another recipe this week. It’s finals season, but I have a plan to get everything done. čÖé

Instructions
  1. Combine all ingredients but spices and water in a food processor.
  2. Blend the ingredients together until "pebbles" form. While the food processor runs, dribble in the water and add the spices. Continue blending until a large ball forms.
  3. Chill the "dough" for about 10 minutes before rolling it out between two sheets of parchment paper. Roll the dough to 1/8 - 1/4 inch thickness.
  4. Make gingerbread men cutouts with a gingerbread man cookie cutter. Wet the cutter slightly to prevent the cutouts from sticking. Re-roll the remaining dough to make more cutouts.
  5. Alternatively, shape the dough into a large rectangle and slice into bars. Enjoy!
