These creamy Chunky Monkey Chia Parfaits are made with two types of chia pudding, bananas, and whipped coconut cream! Perfect for breakfast or dessert!
I have a long, complicated relationship with chia pudding.
Back in middle school, I frequently made it to bring in my lunch. Of course, all of my friends made fun of me because it looked like frog eggs. They’re not wrong! To make things even worse, I consistently spilled my chia pudding . . . all over my clothes. Those sticky little chia seeds attached themselves to my clothes so firmly, I had to scrape them off. And if I missed a seed and it dried onto the fabric . . . it would never come out.
Six months ago, everything changed.
No longer did my pudding look like off-putting frog eggs! Blended chia pudding is much easier to chew! Here’s another plus: The act of blending releases the nutrients trapped within the chia seeds’ hard exteriors.
And as for the “spilling chia pudding all over my clothes” part . . . I taught myself how to use a spoon.
Sometimes you’ve just got to put on your big girl pants and learn how to feed yourself.
With the discovery of blended chia pudding came the realization that I could add anything to my pudding. Protein powder, cocoa, strawberries, spinach . . . you name it, I did it.
Also, the spinach was not bad. I ate it during the January Whole30 (woot!) — so it didn’t have any sweeteners, just cinnamon and almond milk.
Anyway, I decided to try blending NUTS with my chia. Because, you know, I’m NUTS.
With that, the Chunky Monkey Chia Parfait was born! Things can’t get much better than bananas, nuts, and peanut butter, right? I mean, not unless you make them into a delicious, HEALTHY parfait that can be eaten for breakfast!
I used whole, unsalted peanuts because I can tolerate them, and my tastebuds tolerate them very well! *wink wink*
I know many people eat peanuts because they are allergic to tree nuts. I also know that many people eat tree nuts because they are allergic to peanuts. If you’re allergic to peanuts and tree nuts, well . . . I can’t help you, buddy.
Just kidding! Haha, I almost got you there, didn’t I? Use some sunflower seeds or sunflower butter for a nut-free, peanut-free chunky monkey chia parfait. It will taste just as yummy! The nuts definitely impart a certain flavor, but they’re also important for a creamy texture. As long as you have a nut-like substitute, things will be fine.

These chunky monkey chia parfaits can be whipped up in a matter of minutes, and you can adjust the serving size to make an individual parfait, parfaits for a crowd, or anything inbetween!
