In case you didn’t know, “nice cream” is one of the greatest inventions ever. With only a blender and frozen bananas, you can make incredible soft serve that tastes like the real thing! Nice cream is great on its own, but it is even better when blended with delicious add-ins like chocolate, nut butter, and extra fruit.
By adding pitted cherries and cocoa powder, Chocolate Cherry Nice Cream Cake is born! The flavors of this “cake” are reminiscent of black forest cake, but it also has a hint of banana.

This Chocolate Cherry Nice Cream Cake does not include any cake. However, it does have a delicious chewy crust made with dates, walnuts, and almonds. This crust supports a thick layer of creamy chocolate-cherry nice cream, which in turn supports a “glaze” of coconut oil and cocoa powder. A sprinkle of nuts and a drizzle of almond butter make for the perfect toppings.
As if there weren’t already a host of reasons to make this cake, I have one more: it’s insanely easy. All you do is blend, blend, blend for a minute or two to make the crust. Then, clean out the blender and blend, blend, blend again to make the filling. The last step is probably the hardest: freeze it and forget about it for a couple hours. <— At least pretend it’s not on your mind. After it’s frozen, pour a quick little glaze over the top and EAT!
