Chocolate Chai Granola Bars

These Chocolate Chai Granola Bars are easy, crunchy, and flavorful! They have lots of healthy fat and protein from nuts and seeds, and they’re the perfect on-the-go snack. They take less than half an hour to make! If you need an easy, healthy, Paleo snack, these Chocolate Chai Granola Bars are for you!

When I was little, I LOVED Nature Valley granola bars. You know, the crunchy “honey” ones that come in a green package? My mom never bought them, but my friends did & I traded some of my food for those bars! Now, I’ve realized that oats bother my stomach. I still love granola, though, so I’ve made some Paleo alternatives! Last summer, I made this delicious Paleo Coconut Granola (which is still one of my favorite recipes ever!). Last autumn, I made this Paleo Hot Cereal as an alternative to oatmeal. It was so delicious, and it was the perfect easy breakfast when I ran out of time before school.

Now, I’m sharing a Paleo alternative to my favorite Nature Valley granola bars. These bars are just as crunchy, but they are less sweet and less, well, unhealthy. I hope you love them!

Chocolate Chai Granola Bars

The first time I made these, I only added one tablespoon of maple syrup. I can attest to the fact that these granola bars need more than one tablespoon of maple syrup. In fact, they need anywhere from two to four.

I know you probably want to go all gung-ho Paleo and refuse to add any sugar at all (trust me, I do to). BUT I also know that you will hate these granola bars if they do not have sugar. Something about the combination of sesame seeds, almonds, and chai tea (yes, tea leaves and all) mandates some sort of sweetener. The chocolate “syrup” on top is optional (and frankly, I would recommend you not make it; it’s pretty for the photos but messy in all other respects), but the sweetener inside the bars is not. Well, it’s as “required” as I can make it . . . I can’t force you to do anything. 😉

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Add all of the nuts and seeds to a blender or food processor. Pulse the blender until all of the nuts have broken down into small chunks.
  3. Add the salt, cocoa powder, and contents of chai teabag. Pulse again to combine.
  4. Add the egg, melted coconut oil, and maple syrup to the food processor. Pulse one more time to combine.
  5. Line a baking sheet with parchment paper or a silpat baking sheet. Spread out the granola bar mixture until it is a little less than a centimeter thick.
  6. Bake the granola bars in the preheated oven for 20 minutes, or until brown and crisp. Slice the granola bars immediately after removing them from oven, and allow them to cool completely before storing and/or eating.
