  1. Preheat oven to 350 degrees F and grease a 2-quart casserole dish with coconut oil/ghee.
  2. Sauté the green chile, garlic, and bacon together in a large pan over medium heat until fragrant and cooked.
  3. Add cauliflower rice, salt, and pepper. Cover and cook until cauliflower is soft.
  4. Whisk eggs and coconut oil together. Stir rice mixture into eggs and add 1 cup of the mozzarella cheese.
  5. Spread the rice mixture into the greased baking dish. Top with remaining cheese and bake for 30 minutes.
