  1. Sautee the garlic and sage in the olive oil over medium heat, until fragrant. Add the butternut squash noodles and cover. Cook until the noodles are soft.
  2. Season the noodles with salt and pepper to taste. Add more olive oil as needed.
  3. In a small bowl, combine the walnuts, maple syrup, cinnamon, and salt. Add the walnuts to the butternut squash and stir to combine. Serve over a bed of spinach.

Make it a meal: serve with turkey sausage or meatballs. For a veggie option with more protein, try tofu or white beans.
