  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Blend the egg, egg yolk, coffee flour, banana, tapioca flour, beet, agave, almond extract, and vanilla extract until completely smooth.
  3. Pour the smooth mixture into a bowl and stir in the baking powder and salt. Fold in the walnuts ** and pour the mixture into lined muffin tins.
  4. Bake the muffins for 10 minutes, until firm to the touch. Cool completely and serve with butter, nut butter, fruit, or honey!
Recipe Notes

* Nuts are completely optional! Add whichever nuts you like best or simply omit them.

** If you would like to add chocolate chips instead, do so at this step.
