Beet Velvet Muffins

These cute little Beet Velvet Muffins look and taste like red velvet muffins, but they’re much healthier! They’re pretty chewy and dense β€” dense with flavor, that is! The combination of beets and cocoa powder creates earthy undertones and adds an almost fruity flavor to these muffins. They’re delicious with just a pat of butter and maybe a drizzle of honey (if you’re into that), but you can totally go wild with the toppings. Almond butter, fresh fruit, and maybe even chocolate (why not?!) would all be delicious on these muffins!

Ok, back to these Beet Velvet Muffins! They’re not Whole30, which is so sad because I’m looking at the photos now while I’m on my Whole30 & I know that I can’t have any . . . It’s okay, though, because that means more for you guys! haha

I’d recommend making these muffins every chance you get. Not only are they healthy (hello blood-pressure-lowering beets), they actually look and taste good. They’d look and taste extra good if you added some chocolate chips, too (I won’t tell!). If you have kids, feed them these muffins and sneak some extra nutrients into their diet . . . or eat them all yourself and feel good about nourishing your body! πŸ˜‰

Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Blend the egg, egg yolk, coffee flour, banana, tapioca flour, beet, agave, almond extract, and vanilla extract until completely smooth.
  3. Pour the smooth mixture into a bowl and stir in the baking powder and salt. Fold in the walnuts ** and pour the mixture into lined muffin tins.
  4. Bake the muffins for 10 minutes, until firm to the touch. Cool completely and serve with butter, nut butter, fruit, or honey!
Recipe Notes

* Nuts are completely optional! Add whichever nuts you like best or simply omit them.

** If you would like to add chocolate chips instead, do so at this step.
