Mix the ground flax and water together to make a “flax egg.” Heat about 1/2 cup of water. Soak the dates in the hot water for about five minutes.
Remove the dates from the hot water. Add the dates, flax egg, and all remaining ingredients to a blender. Process the ingredients until they form a smooth mixture.
Chill the “dough” for about 10 minutes. Heat a skillet over medium heat, and add a drizzle of olive oil.
Shape the dough into five patties. Cook them in the preheated skillet for 2-3 minutes per side, or until cooked through. Serve with spinach, tomato, cheese (if you tolerate dairy), or any toppings you like.
