These Barbecue Sweet Potato Veggie Burgers are delicious, and they are a perfect burger alternative for vegetarians! They’re also crazy easy to throw together! They are super flavorful, because they have a plethora of BBQ-inspired spices and a “meaty” base of toasted walnuts. These patties are super dense, and they stick together beautifully.
I never thought I’d make a good veggie burger! For years, I’ve thought veggie burgers were boring and tasteless. Then, my mom made a delicious black bean burger. It was so good, I set out to make my own version. Of course, I had to include sweet potato in my veggie burger! Then, I added barbecue flavors to make things more interesting.
I didn’t expect these burgers to blow my mind, but they kind of did. First of all, they held together on the first trial. You can see their beautiful texture in the photos . . . I’m obsessed. Second, they had a wonderful flavor that kind of shocked me. The “dough” doesn’t taste that good, but the finished product is delicious! Third, they have a deep red-orange color that reminds me of salmon. Of course, the texture, color, and flavor is different, but the color and outward appearance makes me think of real meat.
If I want a burger, I will eat a real burger, darn it. I’m not going to replace meat with walnuts and sweet potatoes when my body wants meat. These Barbecue Sweet Potato Veggie Burgers don’t have as much protein as any real meat burger — but I think they have more flavor. They’re a great accompaniment or side dish to meat, and I’d only advocate them as a main dish if you’re not hungry or don’t need a lot of protein.
