Avocado Toast Three Ways
gluten-free and/or Paleo bread
salt & pepper
dairy-free cream cheese
everything bagel seasoning
Toast each slice of bread. Heat a cast-iron skillet with a drizzle of olive oil over medium heat.
Smash one avocado with salt and pepper and lemon juice. Set aside. Prepare the other avocado(s) by cutting artfully into slices or a rose shape.
Spread two slices of toast with cream cheese. Top with avocado slices and everything bagel seasoning.
Top two slices of toast with mashed avocado. In the hot cast-iron pan, fry the eggs until crispy. Season with salt and pepper, and slide the eggs on top of the avocado toasts.
Divide the remaining avocado between two slices of toast. Top with chili flakes, olive oil, and flaky salt.
Serve and enjoy!
I used three miniature avocados to make six toasts. You can easily use two normal-sized avocados.
