These Avocado “Caprese” Stuffed Potatoes are delicious! They’re a simple vegan dinner or a Paleo side dish, and they are super easy to throw together. Although they look fancy, they are very uncomplicated and take almost no hands-on time. If you really want meat, you could add grilled chicken or meatballs to these stuffed potatoes. Otherwise, the avocado, pesto, and cherry tomatoes are sufficient — they’re full of flavor!
This is a very exciting recipe! Why? I’m not sure, maybe just because it’s SUPER DELICIOUS! I think avocado as a substitute for cheese is pure genius (not my original idea FYI, saw it on Pinterest), and it worked out so well in this recipe! The avocado is super creamy (just like real cheese), but it’s really healthy. Add that to pesto/fresh basil and cherry tomatoes and boom! Caprese. Then, throw it inside a baked potato and boom! It’s like fancy bruschetta, but grain-free.
My sister and I loved this recipe . . . mostly because we both love anything containing potatoes. Can you blame us? Potatoes are delicious, and we’re Irish. Obviously, potatoes are our soul food. These Avocado “Caprese” Stuffed Potatoes are just an extension of that “soul food,” because DUH (pesto and tomatoes and avocado are so so so good!!). Bonus: this recipe is Whole30 as long as you use compliant pesto. That’s awesome if you, like me, are doing the September Whole30!
I’m doing the September Whole30 as a reset, mostly for the same reasons as my January Whole30 this year. I feel really good while I’m on the Whole30, and I noticed that my meals have been a little slim on vegetables recently. It might seem counterintuitive, but I actually stress less about my food while I’m doing Whole30 because I know exactly what I can and can’t eat. As long as I’m eating a lot of vegetables, I know I’m putting the best foods possible in my body.
