First, make the brown butter. Melt the butter in a skillet over medium-high heat. Whisk occasionally. Once the butter is brown and fragrant, pour it out of the skillet into a separate bowl. (No need to clean the skillet)
Place the skillet back on heat and add the coconut oil. Add the apple slices, lower heat to medium-low, and cook until the apples are softened.
Mix the maple syrup into the reserved brown butter. Add the butter-syrup mixture into the skillet. Add a pinch each of cinnamon and nutmeg. Serve warm.
For the pancakes
Whisk all dry ingredients together in a large bowl. Combine all wet ingredients in another bowl. Then, mix the wet and dry together until just combined. Heat a skillet over medium heat with a dab of coconut or olive oil.
Pour small dollops of batter into the skillet and cook for approximately 2 minutes, until bubbly and golden. Flip the pancakes and cook until finished. Serve warm with the maple brown butter apples. Enjoy!
