Well, hello there! I’m popping on the blog for a hot second tonight to share this amazing recipe with you! As you probably know if you read this post from last Wednesday, it’s been insane over here at MSPL headquarters! As a result, this is my first (but hopefully not my last) post this week. Next week, things should be back to normal. Phew! In fact, I’m even hoping to share a few new fitness things, like a yoga/life/running update and a weekly workouts post.

But . . . yoga aside. Pancakes!

These pancakes are beyond good. They are super fluffy, but they still have texture thanks to the addition of flax, sunflower, sesame, and chia seeds to the batter! These seeds add the perfect amount of crunch, but the real star of the show is the maple brown butter apples.

In case you thought spiralized apple crumbles, apple cinnamon bread, and apple toasts weren’t enough . . . I present to you Autumn Pancakes with Maple Brown Butter Apples. The queen of all apple desserts, ever. Period. Enough said.

And yes, I said desserts. I mean, make breakfast for dinner . . . have eggs + bacon + spinach for dinner . . . pancakes for dessert. Sounds good to me!

To address the concern that I know is going through everyone’s minds: No, these pancakes are NOT strict Paleo! They use all-purpose gluten-free flour, which is made from a mixture of grains. Yes, these pancakes are “worth it,” and they fit into my personal version of Paleo. If they don’t fit in to yours, I have a great recipe for almond flour pancakes that are completely grain-, dairy-, and soy-free!

For the maple brown butter apples
  1. First, make the brown butter. Melt the butter in a skillet over medium-high heat. Whisk occasionally. Once the butter is brown and fragrant, pour it out of the skillet into a separate bowl. (No need to clean the skillet)
  2. Place the skillet back on heat and add the coconut oil. Add the apple slices, lower heat to medium-low, and cook until the apples are softened.
  3. Mix the maple syrup into the reserved brown butter. Add the butter-syrup mixture into the skillet. Add a pinch each of cinnamon and nutmeg. Serve warm.
For the pancakes
  1. Whisk all dry ingredients together in a large bowl. Combine all wet ingredients in another bowl. Then, mix the wet and dry together until just combined. Heat a skillet over medium heat with a dab of coconut or olive oil.
  2. Pour small dollops of batter into the skillet and cook for approximately 2 minutes, until bubbly and golden. Flip the pancakes and cook until finished. Serve warm with the maple brown butter apples. Enjoy!
