Almond Butter & Jelly Mug Cake

This Almond Butter & Jelly Mug Cake is one of the easiest, yummiest recipes I’ve ever made! It only takes about five minutes to put together, which is awesome because who wants to wait for cake?! Plus, this dessert is, well, a mug cake — which means it’s a million times cuter than normal cake. I don’t know what it is about mug food, but everything is cuter and tastier out of a mug.

Mug cakes are actually my go-to dessert, especially since the rest of my family is not Paleo. When they have non-Paleo desserts, I typically make myself a mug cake or some banana nice cream. Mug cakes are so convenient & so good! They’re the perfect dessert for nights when you don’t want to make an entire cake. They also double as a delicious breakfast! Let’s be honest, it’s definitely healthier than a donut (and donuts pass for breakfast)!

This mug cake is super fudgy and moist (sorry for using that word) thanks to the almond butter! I love any and all nut butters, so I added some extra to the top and then swirled in a bit of jelly. You can use any jelly you want, but I used a special strawberry jelly that my German exchange student brought my family from her hometown. Make sure your jelly is Paleo if you want to keep things that way (try chia jam!), but don’t sweat it if you don’t. (It’s your body & you know better than anyone else what it needs. If you need a little effing jelly on your mug cake then put the jelly on your mug cake, gosh darn it.)

That way, I can write my newsletter for the weekend on Friday. We had a football game tonight (I had to play with the band) and I didn’t have Wi-Fi, so I couldn’t get much work done. We only have one football game left this year and I’m mostly relieved (they’re 6-7 hours long!!), but a little sad. I might miss the long rehearsals and the tedious games a little more than I’m letting on.

Instructions
  1. Blend all ingredients but jelly and 1 tablespoon of the almond butter in a blender.
  2. Once the mixture is smooth, pour it into a (greased if desired) mug.
  3. Microwave on high for about 2 minutes, until the surface of the mug cake is cake-like and soft.
  4. Top with the jelly and reserved almond butter. Enjoy!
